Chilled Fruit Dessert

This chilled fruit dessert blends soft fruit puree, bright fresh fruit, and a little crunch into a spoonable finish that feels generous without being heavy.

Ingredients

  • 4 bananas
  • 3 apples
  • Water, for cooking
  • 2 small pears
  • 1 orange
  • 2 mandarins
  • 1 plum
  • 200 g raisins
  • 100 g walnuts or mixed nuts, roughly chopped
  • 100 g sweetened cereal flakes
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla
  • 200 g ice cream or whipped cream, to serve

Instructions

  1. 1
Cook the bananas and apples in a small amount of water over medium heat until completely soft, about 15 minutes. Blend into a smooth, thick puree. Let cool.
  2. 2
Finely chop the pears, orange, mandarins, and plum.
  3. 3
Combine the chopped fruit with the raisins, nuts, and sweetened cereal flakes.
  4. 4
Season with cinnamon and vanilla and mix well.
  5. 5
Fold in the fruit puree until everything is evenly combined.
  6. 6
Chill for at least 1 hour before serving.
  7. 7
Spoon into bowls and top with ice cream or whipped cream.

Best Served With

Plain butter cookies

Cook's Note

Cook the bananas and apples until fully soft, then blend them into a thick puree, a loose puree makes the dessert watery and harder to set.

Why This Recipe Works

The cooked banana-apple base gives the dessert body, while the fresh fruit keeps it bright and the raisins, nuts, and flakes add texture without much work.

Make It Yours

Swap cinnamon for cardamom. Add chopped toasted walnuts or almonds for extra crunch. Finish with grated dark chocolate before serving.
