Lazy Broiled Chicken Thighs

Hot, glossy, and deeply savory, these lazy broiled chicken thighs go from marinade to broiler to table with very little work. The edges caramelize fast, the center stays juicy, and the pan juices do the rest.

Ingredients

  • 1½ pounds (680 g) boneless, skinless chicken thighs ½ cup (120 ml) All-Purpose Savory Marinade Neutral oil, for the pan Freshly ground black pepper

Instructions

  1. 1
Toss the chicken thighs with the marinade until evenly coated. Let sit while the broiler heats, about 5–10 minutes. For best results, marinade for 2-5 hours. Heat the broiler to high and lightly oil a rimmed, broiler-safe sheet pan. Arrange the chicken in a single layer, letting excess marinade drip off. Season lightly with black pepper. Broil for 6–7 minutes, until the edges begin to caramelize. Flip and broil another 6–8 minutes, until cooked through and glossy. Rest for 2 minutes, then slice or serve whole, spooning the pan juices over the top.

Best Served With

rice, warm flatbread, or No-Stir White Wine Parmesan Risotto

Cook's Note

After marinating, pat the chicken dry and broil it on a wire rack set over a sheet pan; broil 4–5 minutes per side until charred, check that it reaches 165 °F, then rest on the rack so the juices settle.

Why This Recipe Works

Chicken thighs stay juicy under high heat, and All-Purpose Savory Marinade seasons them quickly while helping the edges brown and caramelize. The broiler does the heavy lifting, so dinner lands fast without much hands-on work.

Make It Yours

Add chili flakes to the marinade for gentle heat. Finish with lemon or lime at the table for a brighter edge. Broil closer to the element for more char, or pull earlier for softer edges. Broil on a rack set over the pan if you want deeper caramelization.
