Sharp, bright, and fast to make, this lime-pickled medley adds clean acidity, crunch, and heat to tacos, eggs, bowls, and grilled dishes.
Ingredients
- 1 large red onion, thinly sliced 4 to 6 garlic cloves, thinly sliced or lightly crushed 2 to 3 fresh jalapeños, thinly sliced 240 to 360 ml Citrus Pickle Brine 1 tsp kosher salt 1 tsp sugar
Instructions
- 1Slice the onion, garlic, and jalapeños thinly. Add them to a heatproof bowl or jar, separating the onion layers as you go. Pour over the Citrus Pickle Brine , then add the salt and sugar. Toss until everything is evenly coated and the onions start to soften. Let sit at room temperature for 30 minutes. Taste and adjust with more salt or lime juice if needed. Chill for at least a few hours before serving.

Slice vegetables evenly, thin pieces pickle faster and stay crisp; blanch denser vegetables if needed and choose a warm brine for quick flavor or a cooled brine for extra crunch, making sure all vegetables are submerged.
